Head chef, Stefano Mazzina, comes from the Lake Como District in Northern Italy. His first culinary influences and his traditional cooking techniques originally stem from his rural Italian upbringing and hours spent helping his ‘mamma Domenica’ prepare delicious meals for family and friends.
These humble beginnings gave Stefano a passion for pleasing people with food, and this passion drives the kitchen at Fiasco Ristorante. He is inspired by the quality of abundant local produce in Coffs Harbour and the challenge of incorporating it into his traditional family recipes.
Originally from Chianti, in the heart of Tuscan wine country, sommelier Andrea Corsi has an unbridled passion and enthusiasm for Italian wine and food. Andrea has been an integral part of the Fiasco family from the beginning, providing expertise in restaurant management and wine knowledge gained over 20 years of working in the restaurant industry.
Andrea has worked as a chef and sommelier with renowned restaurateurs such as Giovanni Pilu in Sydney and Raymond Blanc in England, and has also recently returned from opening his own restaurant in Italy. He loves living and working in Australia because of its mix of cultures and the availability of fresh produce and quality wines.
Head bartender, Alessandro Lindiri, joined Fiasco in 2011, deciding to settle in Coffs Harbour after passing through on holiday. Alessandro hails from the Italian island of Sardinia, and pulled his first beer at the age of 9 in his parents’ hotel. This love of hospitality saw him pursue a career in the industry, working in luxury hotels such as the Cala Di Volpe in Sardinia and the Gallery Hotel Art in Florence.
A member of the Italian Barman Federation and graduate of the Illy Coffee University in Trieste, Italy, Alessandro brings a wealth of knowledge to Fiasco Bar, topped off with traditional Italian hospitality and a cheeky smile.
