Hereford Red Beef

Hereford Red Beef is a sustainable, ethical beef producer based in the fertile grazing country of Central West New South Wales. The family-run farm grazes 1000 Hereford cows under the experienced hand of third generation stockmen who care for the hormone free, grass fed cattle.

Strict quality control standards and a pristine natural environment allow Hereford Red to supply a premium product in keeping with Fiasco’s paddock to plate philosophy. Fiasco is pleased to offer this first class beef as part of our seasonally changing menu, giving diners a chance to taste the finest regional produce at its best.

Burrawong Gaian

Priding ourselves on sustainable organic farming, Burrawong Gaian produces small numbers of premium quality pasture reared meat chickens, ducks, heritage breed pigs, seasonally available game birds, and free range duck eggs.

Raising livestock in a natural open range environment allows them to forage and express their character. They are free from chemical additives, artificial hormones and medications.

Committed to the preservation of rare breeds threatened by large scale industrial agriculture, we support the Rare Breeds Trust. Our farm is accredited with Humane Choice who certify ethically produced food.

Processing poultry on site at one of our two farms on the NSW Mid North Coast, we strive to ensure each and every customer enjoys our paddock to plate philosophy.

Milly Hill Lamb

A family owned and operated business, Milly Hill Lamb of Armidale, New South Wales, is fast becoming one of the most sought after premium lamb suppliers in New South Wales. In recognition of the outstanding quality and consistency of their free range lambs, Milly Hill was awarded the country’s highest produce accolade, the President’s Medal at the 2012 Royal Agricultural Society of NSW Awards.

Milly Hill Lamb began in 2007 as a small local business supplying home-delivered ‘lamb in a box’ to friends and family in the New England district of NSW. It now supplies some of the best restaurants in New South Wales and Queensland as restaurateurs continue to appreciate the delicious flavour, superb texture and tenderness of Milly Hill Lamb.

Coffs Harbour Fishermen’s Co-operative

The Coffs Harbour Fishermen’s Co-operative supplies the Coffs Coast with fresh, locally caught seafood almost every day of the year. Owned by 45 local fishermen, the Co-op has been operating since the 1950s, and offers retail and wholesale fresh seafood harvested mainly from fishing fleets working off the coast of Coffs Harbour and the surrounding areas.

The Co-op offers an outstanding array of fresh and cooked seafood, with fish, mussels, crabs, prawns, octopus, oysters, scallops and bugs all available at various times throughout the year. Our proximity to the ocean and our direct supply of seafood also means we are able to offer sashimi grade tuna in season, as well as keeping live lobster, mud crabs and spanner crabs when available.
